We were lucky enough to meet Michele Thorne, Executive Director of the Good Meat Project, at @ncchoices Carolina Meat Conference this July where she shared her strategies on saving money while putting her money where her mouth is and supporting local farmers!

When you buy directly from local farmers, buying in bulk is a great strategy to balance the costs. And you know you’re all set with good protein for you and your family on a rainy day!

We do this with pork, I’m a hunter so venison is what I was raised on and that’s what I feed my family instead of beef. Now I will say this, the struggle for a lot of people to be able to buy meat in bulk like this is the storage for it. Many people don’t have a deep freezer and some don’t even have the space for one. But if you do, this is definitely the way to go.

Woah!!! I pay a total of $3.43/lb for a whole, finished out, in my freezer. I'm in Indiana and I am friends with the rancher, he lives 10 miles from the processer, and I live 20 miles from there. We are learning to save and use everything from that cow.

Is that 7.86 per pound for the entire cow (bones, hide cartilage) or for muscle meat? Id love to see her average price for skeletal muscle meat.

She pays the transportation, does not have the overhead of the brick-and-mortar store and all its employees, and is averaging out the price per pound across the entire carcass. Not every cut is priced the same, and she's comparing the average to the individual prime cuts.

I have a shopping basket and no transport. I can't afford to buy an entire animal so I "naturally" have to pay more as a financial victim but also a logistics beneficiary of the distribution system.

Bet that rancher would have made more money taking that to the auction if he had a nice group/string to run through the ring. That is not a good enough price for me to let go of one of my butcher ready steers. No way Jose
