In laboratory experiments, HCAs and PAHs have been found to be mutagenic-that is, they cause changes in DNA that may increase the risk of cancer."

"Polyacrylamide is a polymer of controllable molecular weight formed by the polymerization of acrylamide monomers available in one of three forms: solid (powder or micro beads), aqueous solution, or inverse emulsions (in water droplets coated with surfactant and suspended in mineral oil). Residual acrylamide monomer is likely an impurity in most Polyacrylamide preparations, ranging from less than 1 ppm to 600 ppm. Higher levels of acrylamide monomers are present in the solid form compared to the other two forms. Polyacrylamide is reportedly used in 110 cosmetic formulations, at concentrations ranging from 0.05% to 2.8%."

The most attention for battling acrylamide reduction/removal has been focused on Asparaginase enzymes to convert asparagine {burnt matter, components left over} into Aspartic acid instead of Acrylamide. Hell DSM'S Preventase and Novozyme's Acrylaway do the same thing, yet its not like the FDA is sharing that most likely because it was developed in "part" by canadian scientists.

This process is called "Glycation" when a excess protein molecule bonds with a excess sugar molecule without the controlling action of a enzyme it causes glycation and this throws off a bunch of free radicals and causes other harmful things to happen. this can also happen when you cook your food like trace shows in the video.
