if your in a calorie deficit but eating junk food you will lose significant muscle and fat and water. if you are in a deficit and hit your micro and macro requirements which typically leaves very little room for "cheat meals" or junk food than you will retain muscle and lose fat and get shredded. BUT, that little cheat meal will harm gut biome and hormone profile no question. harming the gut biome leads to leaky gut and will lead to your body not being able to absorb the nutrients and supplements you eat and take. especially if your bulking and you hit your macro and micro requirements, which many think they hit but arena actually hitting, then you will inevitably a larger room for cheat calories which will only lead to more leaky gut and hormone damage.

Without regulated hormones, you won't train well, you won't function, etc. There are factors as sleep that only a person that slept poorly for a long period eating junk can tell. It matters, if your thyroid is not working properly and your hormones are all over the place you won't be able to maintain a decent shape. How is it possible to stay lean constantly if you are getting insulin spikes and without micronutrients? It's not possible, you'll end up storing fat even if you don't consume too many calories.

Until you get lean and want to get leaner, then intense hunger creeps in. Here when you are forced to eat low caloric dense food to fill you up. Pizza and Donuts won't cut it buddy.

Personally(it is working for me) I only track calories. If I have a fiew hundred calories left at the end od the day I'm totally ok with a fiew snacks but I don't really eat outside of my meals anyway so there is not an urge to ressist. And whenever there is a rare ocatoon I don't give a damn f for one day I allow myself to do whatever.

Greg is the most direct and practical fitness youtuber. What he says actually is the truth and people clown on him a lot but he's more legit than 99 percent of these other clowns. What he is saying is if you just wanna lose weight or ultimately what determines fat loss is caloric deficit, doesn't matter if you're eating the most healthy food in the world. If you're not in a caloric deficit you will not lose weight.
But for how you "feel" fatigue, hormonal balance, brain fog, energy levels, mood etc your quality of food matters a lot.
Ideally you wanna be mostly having healthy foods to keep your brain and body health at optimum but little bit of fun food is also okay AS LONG AS you're still in a caloric deficit
