Vietnamese from the south,
we like to mix the broth with hoisin and siracha.
It’s pretty normal.
And lime usually put on the side so when we like to squeeze them in we don’t get burn from the hot broth.
I know it’s for presentation but in vietnam no one garnish it like that 🫶

From a point of view of a Vietnamese, I think Nick did very good job in cooking and Roger did pretty good job in review as well. Yes, we don’t bland noodle in broth, should be a separate pot of boiling water, drain well, then add very hot broth into the noodle bowl with thin sliced raw meat and yes, don’t forget green onion, white onion and cilantro. 😊
