What I eat in a week in summer *realistic*

In today's video I share with you many meals that I ate this week, all vegan and realistic, during the summer months. I love to take advantage of the abundance of fresh fruit and veggies and incorporate as many of them as possible into my meals. I try to eat healthily to fuel my active lifestyle and feel my best.

» Cold noodle salad: any noodles of choice, red cabbage, spring onions, red bell pepper, edamame beans or tofu (or protein of choice), thinly sliced lettuce (I like romaine), for the sauce, 2tbsp peanut butter, 2 tbsp soy sauce, 1 tsp chilli oil with the crispy bits, 1 tsp rice vinegar, 1 tbsp maple syrup, 1 tsp garlic powder, mix. Then add water and mix to get the consistency you like. Pour over salad and combine. Fresh ginger and fresh garlic would be nice in the sauce too.

» Chickpea pasta salad: pasta of choice, 1 can chickpeas, 1 tbsp mustard (i use whatever I have at home), 1 or 2 spears of a pickle diced, 2 tbsp pickle juice, salt, pepper, mayonnaise, thinly sliced lettuce. Mash the chickpeas, add the other ingredients and mix, then allow the pasta to cool before adding and combing.

Hey Immy… I just thought you might wanna know that I made a massive batch of homemade pasta sauce a few days ago, and I used your “sneaky tip” of blending in a couple of cans of white kidney beans (cannellini beans) for protein, texture, and creaminess. Of all the things I have learned from you throughout the years, this “sneaky tip” has been one of the best tips ever!! I am shouting out a massive thank-you across the miles for this great plant-based cooking tip!! Now… can you please tell us what you do with those cute little Fairytale Eggplant🍆 (Aubergine) that you have been growing. (Can a veggie really be cute?) I love all veggies, but eggplant is my least fave. With that said, these Fairytale Eggplant look so adorable!! I love them already just from seeing them in your recent videos. How do you cook them? I live on charcuteries (yep, that's now a word) in the summer and times when I just don't want to cook. It also really helps on reducing food wastes because I can just throw all the stuff on a board and call it a meal. Also, that chickpea bulgur bowl looks so yummy.

True Story: When I was in my teens (in the 1970’s) I got a wok for Christmas from my parents... the basic steel version that fits over a ring on the stovetop burner, and it came with a mini-shovel for flipping and scooping the wok contents. Now don’t laugh, but this was a time way before the internet and way before any type of international cuisine was made at home. I had no idea how to use it or what to cook with it. Thankfully, it came with a small instruction booklet which included some basic recipes. Why am I telling you this… well, now I live in the wilderness of northern 🇨🇦 with my partner and we have a massive garden and a greenhouse… and a 40-something year old wok. Over time, I have discovered that I can cook just about any veggie in my wok… and, not to do any wok flexing here, but whatever I cook in my wok always looks great and tastes delicious. Better yet, I can cook a lot of food in my wok cuz we love leftovers, AND food cooked in a wok goes great with rice or noodles. YUM!! To sum things up… sometimes a strange Christmas present can end up being y’er BFF. Long live the wok and fresh summer veggies!! Hi, I am a worker in Germany and I was guided to your channel by a sustainability app. Most of the week including the weekends i have little time to shop, cook and enjoy my meals (i try as much as i can, i also have a family), your house, your kitchen and your kitchen gear look incredible, almost impossible (to me 😂). I would like to suggest that you could maybe start a new channel only with your recipes and preparations. Anyway, thank you
