In Bengali-speaking Bangladesh and the Indian state of West Bengal, the jhinge or Ridged Gourd (ঝিঙে) is a popular vegetable. Doodh Jhinge is a dish where the (Jhinge) Ridged Gourd curry is cooked in fresh milk by adding a combination of spices or herbs, which includes ground turmeric, cumin, coriander, ginger, and fresh or dried chilies. Usually, Wet curries contain significant amounts of sauce or gravy based on broth, coconut cream or coconut milk, dairy cream or yogurt, legume purée, sautéed crushed onion, or tomato purée. Most curries are water-based, with occasional use of dairy and coconut milk. Curry dishes are usually thick and spicy and are eaten along with steamed rice and a variety of Indian bread. |
