Today I'm making Unsweetened Applesauce! I make applesauce to substitute for eggs when I'm baking. I've been trying to make more vegan food lately and this is such an easy egg substitute. For every egg, you can use 1/4 cup of applesauce in your baking. If you like your applesauce sweet, you can add the sweetener of your choice to the pot before you simmer it!

How to make Unsweetened Applesauce RECIPE:
Yield: 4 cups (2 pints)

Ingredients

2 kg (4.5 lbs, 10 med/large) apples of your choice
1/4 cup (60 ml) water
2 tbsp (27 ml) lemon juice

Directions

1. Peel, core and cube apples.

2. Place apples in a large pot. Add water and lemon juice. Bring to a boil, cover and simmer 25-60 minutes until apples are fork tender.

3. Mash or purée until smooth.

Tip: Apples will keep in the fridge for a week or so.
