One of my all-time favorite spread! Whether it’s on breakfast toasts, macarons or as cookie jam filling, I just can’t get enough of this smooth, luscious and tangy taste.

- Ingredients -

☑ zest and juice from 2 lemons (juice approx.1/8 cup / 45 ml)
☑ ½ cup (100 g) caster sugar
☑ 2 eggs
☑ 3 tbsp (40 g) unsalted butter - diced
☑ pinch of salt
