Easy Cucumber Raita

Raita is an essential side dish for many Indian meals. This easy cucumber raita is light and refreshing with the beautiful flavours of cumin and mint.

INGREDIENTS

1 English cucumber, peeled, seeded and finely diced
1 tsp, cumin
Salt to taste
1/2 cup, chopped fresh coriander
2 tbsp, chopped fresh mint
2 cups, plain yogurt (Balkan, Greek, 3%, 2%, etc.)

METHOD

Add all ingredients to a bowl and mix to combine. Refrigerate until ready to serve. Enjoy! :)
