We would probably have insouke as a main character as Doma actually wanted to keep insouke's mother around, not to eat but because she was good at singing. The story line would probably start with insouke witnessing Doma killing his mother and him discovering that Doma is a demon and insouke swearing revenge on Doma but struggling with this desire as he views doma as a father figure

I would do a better job at being a Demon King, than Muzan. I'm emotionless and emotions can't affect me. The Blue spider Lily will be found quickier with the help of my human servants. Doma is misunderstood... his parents forced him to be the leader of his cult and never lived a normal childhood... he couldn't mourn over his parent's deaths because he had to keep his image of being the diety his parent's bestowed upon him and never show weaknesses. Meaning that he had to hide his true emotions and ended up losing them in the end...
