Spicy Tuna and Crispy Rice Recipe

Ingredients

225g sashimi grade yellowfin tuna
1 1/2 cups sushi rice
1/3 cup mayo
1 tsp sesame oil
1 1/2 tbsp sriracha
Sesame seeds
Green onions
Frying oil
Salt

Rice Seasoning
1/2 cup rice vinegar
1 Tsp salt
2 Tbsp of sugar
1 tsp sesame oil

METHOD:

1 Rinse the rice thoroughly until water runs clear Once you can see a good amount of the starch has been rinsed off, drain it and get it into pot.

2 Then add an equal amount of water. Then onto the stove on high and bring it to a light boil. Stir to make sure nothing sticks. Once gently boiling,Turn the heat back on to its lowest setting possible and cook for 10 minutes. After 10 minutes, turn off the heat and then let it steam for an additional 5 mins.

3 While the rice is cooking, combine the rice vinegar, salt and sugar in a microwave safe bowl and microwave for a minute to dissolve sugar and salt

4 When the rice is cooked place into a large bowl then drizzle the rice vinegar mixture along with sesame oil then carefully mix.

5 Place rice into a shallow tray lined with plastic wrap and then compact it down.Then allow the rice to cool, wrap with cling wrap and set in the fridge for at least 2 hours.

6 Slice tuna against the grain, dice and finely chop. Then transfer that into a bowl. Then add the mayo, the sesame oil, the sriracha ,salt and mix into the tuna until it’s well combined.

7 When ready, remove from the plastic and trim the edges so its nice and square, cut into 1 Inch by 2-3 inch shapes. You can spray your knife with some cooking spray so it doesn’t stick to the rice.

8 Once the rice is cut then they are ready to fry.

9 In a small pot filled with frying oil, turn the heat on and heat the oil until it reaches about 220c. Then add a few of the pieces of rice at a time and fry for 3 minutes or until the rice is lightly beginning to brown. Once crisp, remove from the oil and let it rest on a wire rack.

10 Serve the tuna mix onto along With sesame seeds and green finely chopped green onions

Salt? A little soy works better (IMHO) for many reasons.
