I believe he soft boiled them before freezing them...just fyi. That's why his eggs were actually solid and you couldn't see the yolk after peeling.

Editing 5 months later: the egg was simply frozen too short of a time. It needed to be frozen for a longer period of time. I'm editing because so many keep saying the same thing, and nobody has time to read through all the comments before adding their own. 🫡

What the short didn't tell you is that you're supposed to use soft boiled eggs because the frying doesn't actually cook them, it'll cook them a bit, but you can actually just fry the tempura layer, leaving everything inside untouched. This has been done with ice, icecream, and butter.
