Watched a Barista on YT use this method. Seeing he's making anywhere from 2-6 drinks at time he doesn't have time to stand and steam milk. He listens for the sound change to stop steaming. Cannot fault it because his milk was spot on including his latte art.

I've been using this technique for a year now, it's awesome! I have a dual boiler and the slanted front side lets me rest the pitcher at an angle to get that perfect swirl.

A digital thermometer would also make an alarm sound when the desired temperature is reached.

There's actually no need to put the pitcher on the drip tray. Just find something stable (like a jar or a can) that's the right height and put it to the side of the machine, with the pitcher on top and the steam wand submerged to the level you want. It works perfectly with several machines I tried, from a lever-based Elektra Microcasa a Leva, through to a super-automatic Gaggia Magenta Plus to a dual E61 grouphead Expobar.

Need to try it on my Barista Pro, I'm still getting used to the steaming process on Breville. On my last espresso machine I was a pro at creating microfoam, but with the 3 hole spout it's definitely challenging.
