GROUND BEEF RAMEN STIR FRY
Prep time: 5 minutes
Cook time: 15 minutes
Total time: 20 minutes
Yields: 6 - 1 cup servings
INGREDIENTS
* 1 pound Laura's Lean Ground Beef
* 2 (3-ounce) packets of Ramen noodles (flavor packet discarded)
* 2 cups broccoli florets, bite-size pieces, steamed
* ½ cup sliced green onions, divided
* 1 tablespoon minced garlic
* 1 tablespoon minced ginger
* 1 tablespoon toasted sesame oil
* 1 cup soy sauce
* 4 tablespoons brown sugar
* 4 tablespoons hoisin sauce
* 2 tablespoons seasoned rice-wine vinegar
* 2 tablespoons sweet chili sauce
INSTRUCTIONS
1. Boil the ramen noodles, in a medium-sized pot, for 3 minutes. Drain and set them aside.
2. Mix your sauce in a medium bowl by adding the soy sauce, brown sugar, hoisin sauce, seasoned rice wine vinegar, and sweet chili sauce. Stir until well combined and set aside.
3. In a large heavy-duty skillet, on high heat, brown your Laura’s Lean ground beef for 8-10 minutes or until it is cooked through and has some caramelization on it.
4. Once your beef is browned, push it to the side of your skillet. In the empty side of your skillet add the toasted sesame oil, minced garlic, minced ginger, and sliced green onions (reserving 1 tablespoon of the sliced green onions to use as garnish once the stir fry is done). Lightly cook for 1-2 more minutes or until the garlic, ginger, and green onions are tender, and then combine with the beef.
4. Once your beef is browned, push it to the side of your skillet. In the empty side of your skillet add the toasted sesame oil, minced garlic, minced ginger, and sliced green onions (reserving 1 tablespoon of the sliced green onions to use as garnish once the stir fry is done). Lightly cook for 1-2 more minutes or until the garlic, ginger, and green onions are tender, and then combine with the beef.
Serve right away while it is still hot. Leftovers can be stored, in a sealed container, in the refrigerator for up to 3 days. You can reheat servings in the microwave for 45-second intervals or until heated through.
