I had diabetes for 14 years, in that time I followed their diet recommendations and had my medicine increased by 8 times. Same results in blood sugar and a1c. I got away from all seed oils, and started eating one meal a day, I pretty much only use butter to cook with. The one meal a day can be anything I want regardless of carbs. The first two weeks suck, when you're hungry just drink water. You eventually get used to it, a very small snack every few weeks when you feel hungry during the day. Take vitamin D, it helps more than any meds I got. After 14 years of following their advice and getting worse every year, the one meal a day has me on zero meds and below pre- diabetic in less than a year. I'm also about 45 pounds lighter and feeling as good as I did 20 years ago.

Our family of 6 lost our only job back in September and our pantry was a saving Grace to get us through until my husband found another job two months later. I’ll be working on refilling the pantry holes this winter.

Thank you Lisa! I have never felt so heard in relating to your Mom. I'm 66 and a domestic violence survivor with a low amount of social security. And a ton of medical issues. Not eligible for any assistance programs ( which i never wanted to be on) due to my name being on the house with my husband. But you know what? I survived that stuff. Started canning again, meat veg and now have a decently stocked pantry. Thank you so much for what you do!

I work on prepping something daily. Canning, freezing, dehydrating. We have set our heat to 60 daily pulled out the electric blanket for the night when the temperature is set at 50.
Working on very low to no waste.
Thank you for all the recommendations. 💜

The last 3 years have been a challenge with me not working and having 4 major surgeries. Thankful by the end of the year all medical bills will be paid in full.

Fortunately, we paid extra each month on the principle on our home mortgage pretty much since we built our home. Sometimes it was only $100, but some months it was around $200. This allowed us to pay off our mortgage far earlier than when we retired. A few extra dollars each month can really add up over time, just like a few extra cans of food purchased when you do your grocery shopping can really add up over time. We utilized passive solar principles when we built our home so our power bills are smaller than most. Since retiring we enlarged our garden space, started a mini orchard, got chickens and I went back to cooking almost everything from scratch. I shop sales and buy in bulk when I see a good deal. We preserve everything we dojn't eat fresh from the garden and mini orchard. I grind my own wheat berries for flour. I'm canning beef stew as I'm watching your video. Still have chili to do and then all my pantry shelves will be full. We drive an older truck and car. We try to help others by teaching gardening and food preservation classes at our local collage.

I’ve been sick with bowel problems— fighting a blockage and diverticulitis. I find that the simplicity of my home-canned foods has been a God-send. Especially “ugly chicken!” Having rice and oatmeal were also easy fixes. Having a well- stocked home-canned pantry was so helpful when I didn’t feel like cooking fully raw meat; putting together simple meals is so easy.

I'm not going to participate in the entire Canuary Challenge this year ... Just one week. For exactly the reasons you mentioned: LOW income, and limited ability to restock my shelves. (Single, no extendef family, $ocial $ecurity, limited space...). Love y'all. Keep prepping, Prep HARD. Head on a swivel.

I started canning about a year ago, mostly to have convenience meals ready to go. Man I was glad to have them when the tornadoes went through middle TN a couple of weeks ago. Those meals to go were easy to cook on a camp stove and fed my family and the neighbors when no one had power. And having a few things like instant coffee, candy/snacks, and hot cocoa made a huge difference for keeping up morale. I would have never thought of the convenience items without your channel. Thank you for all that you do!

You’re a very smart cookie Leisa! Before I retired, I paid down all debt. Our pantry’s are stocked. Our freezers are full and the freeze dryer is running, non-stop! We just had the generator Our home is paid off. Our vehicles are paid off. Etc. It’s gotta be done with today’s prices. Very scary for my grands. 😐

That whole idea about offsetting future prices by buying and preserving it now is why I started when I was about 60 years old (7 years ago). I realized that Social Security only wasn't going to do it for me. Now I can use what I purchased on sale some time ago and fill in holes as needed at today's prices. It definitely has stretched my budget. Between dried beans, rice, corn, pasta, I can make up all sort of foods, besides my home canned jars. And my %$$& goat barn, which I build by myself except for the roof, now has a non leaking roof on it and it's paid for.

My friends think I am crazy at my ago (78) to be canning and freezing. We are fortunate to have no debt. I just love to be prepared. Also I have a garden.

Since we cut out refined carbs and prepared foods, since we stopped going out to eat, my husband - whose A1C was 12 - is now not having to take any diabetic medicine and we are looking for his A1C to be less than 6.5. His lymphoma wounds are finally healing and his sleep apnea seems to be less. Fats and proteins are not bad! We eat much more vegies and less fruits. We are saving on our food budget because we're eating less and heating less expensive foods. We're also losing weight and feeling much better.

I have been budgeting since I been 17 years old - 60 years old. My entire adult life and then couple.
At this age, I said to myself, to have all my debt paid off by the time, I turn 50 years old.
And avoid having anymore debt . My saying goes like this, "Live within or below my means, just NOT above my means" . I do what's best for us.

This is my 1yr canning. We started a garden then my husband had a massive heart attack. While the garden suffered I did a lot of small batch canning and was able to build a pantry from small batch canning. It’s time consuming but now I have something for those rough times.

Most public libraries also have digital e-book access, no charge. My local library tucks a note into each physical book I check out - It says “Today you saved $xx, this year you’ve saved $Xx and throughout your library lifetime membership you’ve saved $XX”. Imagine my delight to see I’ve saved $26, 582 by using my local library these past several years. OK, so I like to read!😊

I love reading books also, Im in Northern Indiana and my local library has books on line you can read on phones, tablets, etc. You just sign in with your library card and choose a book, or if being used, select it to reserve it. No cost, No driving to get the book. I love it!

I’m looking forward to seeing how you alter your menus and meals to meet your new dietary needs. My husband must limit his sodium intake and I watch my carb and sugar intake, so I’m right there with you. It’s definitely changing the contents of our pantry.

Good morning Lisa, we are in north central MN and the weather doesn’t like to work with us to get early gardening started. But we work with it, hydroponic gardening to get our seeds going and I have several high tunnels to get ready for this late spring. I have always stacked
/prep cases of veggies and dog food since I got married in 1979. However about 10 years ago I saw a movie “Contagion “ w/ Matt Damon and something inside me said I need more. Then years later COVID hit and I started to watch you and several other knowledgeable ladies in canning, homesteading, and took your/their challenges. I joined buy the extra 5 can a week challenge, canning challenge, garden challenge etc. in the last 4 years I have become more prepared & knowledgeable, thanks to you and the others. I am learning constantly. My husband and I are 69 and I have been telling any and all who would listen to get ready for hard times again…for many years. Most did nothing, my own children have done minimal or nothing. I am sure I am the mom, grandma, who wears a tin hat. If anything, I am supplementing our retirement, as you say…our ready status is for anything that may come up. And prices certainly are going up up up. If there is a WW3 prices are going to go up even more. 😁
