How long will pectin (Sure Jel) last beyond the best buy date? I know you use and recommend Pomona, but I have a couple of boxes of regular pectin that I would like to use to make some preserves.

My great aunt used to take old jars, empty them and put in old washtub on the woodstove. Boiled them for 15 or 20 minutes then just let them sit in hot water and bleach. Then regular washing and drying. I still have a lot of those jars and use them. We did have a towel in bottom of tub and had them sitting in upside down rings to stabilize.

I have used my not so clean homemade tallow to grease the rim of my All-American canner. Works great.

I'm loving the canning chats. I've been canning almost 50 years with very basic used equipment and I absolutely love that you don't push the all next latest and greatest.
Quick question: How much ACV would you consider a year's supply. Canning, cleaning, animal water and fire cider tonic for health?

The part about throwing the jars away if really old food/spoiled food is in them. I would guess that some people would be lazy and not wash the jars in hot soapy water well enough to get the jars truly clean. Sometimes food residue sticks to the insides which can be very hard to scrape 100% clean. I would assume maybe this is why they are saying to throw away the jar, especially with small mouth jars. It's very hard even with a brush. My hands are small enough to fit in the jar, but not everyone's is.
I would also do a strong vinegar & hot water soak to sterilize them just to be safe.
But I would not throw them away unless the interior surface of the glass is etched.

Regarding the canned beet pickling liquid: if the beets were heated in the pickling liquid before being added to the jars and the leftover beet-infused liquid was canned, there’s no guarantee the pickling liquid will be acidic enough to safely can a new batch of beets for shelf stable storage. It’s PROBABLY ok but you just don’t know how much material from the beets neutralized the vinegar, but you could certainly use the leftover liquid for pickling beets that were stored in the refrigerator! Of course if the pickling liquid wasn’t originally heated with beets in it there shouldn’t be a problem.

I accidentally turned off my timer to make a pizza while canning white fish. Does it matter if the fish go more than 100 minutes? Thanks for the great work.

Hi. I canned salsa. After I took them out of the water bath a few hours later the liquid looked like it was turning brown. Lids are sealed on tight... Is the salsa bad??? Should I toss it..

I just canned ground beef this weekend and some of the jars have a large fat cap (about 2 inches). Will this go rancid more quickly and do I need to eat them faster?

I am planning to can for the first time this week (super excited)! I’m going to start with pinto beans because they’re cheap so, I f I mess them I haven’t lost much. Thanks for the link to the NCHFP, that’s what I came this chat to find out. I couldn’t figure out how long to can them for my elevation.

It is possible the people that are having issues with the Ball lids may be because they got them from Amazon and those lids are counterfeit. They even conterfeited the box.

I am diabetic and I use low sugar pectin 1/2 Splenda & 1/2 Allulose for jams and sauces. Straight Splenda for things that you don't need to set up
