She is using sheet music she found online to reference the key signature and analyze the chord progressions while she improvises. This cover is her arrangement. There is no sheet for it. It's just in her head.

This is the prettiest and most tender sounding version of Interstellar I have heard on YouTube so far. There are two ways to play this song - intense or beautiful. This version really brings to life the latter.
