I’m watching some of your old videos and just saw this one. I know it has been a long time but I am saying a special prayer for that family tonight. No matter how much time passes losing a loved one, especially a child can never be easy.

Jam looks great! I did apricot jam last week too.

Do not set hot jars on a counter top without a towel underneath. A hot jar hitting a cold surface can make the jar explode. Boil your jars to disinfect them before you use them. Check all your jars for any chips or cracks before you use them. They will not seal properly if the lip of the jar is chipped.

You should take a damp cloth and wipe the lip of the jar clean before you apply the lid and affix the ring. The lid should be in simmering water for a few minutes to soften the seal a bit before use.

The ring goes on finger tight, do not screw it down hard. It needs room for air to escape while it is boiling.

Jars need some type of rack under them while boiling to prevent them from breaking. You need a jar lifter to add the jars to and to remove them from the boiling water.

Use a wide mouth funnel and ladle to put the hot liquid in the jars... again... wipe the lip clean before applying ring and lid. Make sure the water comes up to a rolling boil before you start the 10 minute timer.

Once your jars have sat for 24 hours, remove the rings, check the lids for a good seal and store them in single layers. Do not stack jars on top of each other. If a seal breaks and you aren't aware, you can get very sick. If the ring is affixed or something else is on top of it, you may not know.

Follow the Ball Blue Book or the USDA Complete Guide to Home Canning book protocols for safe canning procedures. Don't listen to the people with their granny's, aunt's, babies mamas great ancestor did it this way stories... there are proven safety methods for proper canning.

Things that need pressure canned cannot be safely done in a water bath canner. Pressure canning has been around since Napolean Bonaparte commissioned someone to come up with SAFE ways to preserve food because his troops were dying from food borne illnesses.

Rose Red Homestead is the only reliable YouTube channel I would follow for safe canning practices. There are more steps to canning than Christine put out on this video... but I hope you do try making your own jams and jellies, because she is correct... they DO taste better. And once you know ALL the steps, it is super easy as well.
