Mexican fajitas are my favorite. Chicken or steak, they serve it in a hot sizzling pan and you assemble the ingredients yourself. Give it a try. I promise you wont be disappointed.

My Mexican-American partner introduced me to migas--tortilla pieces fried crisp (I like flour tortillas for this purpose), then mixed with scrambled eggs and onion.

The birria is my favourite Mexican dish.I love making mine with a chicken, chorizo and tomato filling and a sauce made with chicken stock.It's a great and delicious 😋 dish.
