Recipe

400 g jackfruit (1 can), 4 burger buns, 4 slices cheddar or a vegan
alternative, 100 ml barbecue sauce, Vegan mayonnaise, 2 tomatoes,
endive lettuce, 1 red onion, 1 tsp paprika, canola oil for frying, salt and
pepper
Dry the jackfruit pieces on kitchen paper. Peel the onion, halve it and cut
it into fine strips. Heat the pan on the grill and add the oil. Once the oil
starts to make waves, add the jackfruit and onion and season with
paprika, salt and pepper. Once everything is seared hot, use a spatula to
pull apart the jackfruit pieces. Continue to sear everything until nicely
browned. Reduce the heat and add the barbecue sauce. Mix everything
well and fry for another 5 minutes over medium heat. Toast the burger
buns on the grill with the cut sides down. Spread vegan mayo on the
bottoms, cheddar cheese, lettuce and tomato slices on top. Spread the
tops of the buns with vegan mayo as well, add jackfruit on top of the
burgers and fold closed. Serve with sweet potato fries.
