How does one imply there are only two bases or eigenstates based on obtaining only two eigenvalues from Stern Gerlach experiments ?

I still do not understand why each Cartesian coordinate Pauli matrices has different eigenvectors. I understand they come from solution of the Pauli matrices eigenvalue maths problem but I do get how one spin vector can have 3 different eigenvalues in each Cartesian direction. Moreover each eigenstate is based on the same eigenstate of Z direction i.e. the eigenstates in other directions are linear combinations of the eigenstates of Z directions. do you have a reference I can read about it ? Most books talk about the properties of Pauli but I do not get an intuitive feel of this object and what is the purpose.
