10 Easy Baby Food Recipes (Good for ALL THE FAMILY TOO!)- Episode 3

Hey lovely people! Welcome back to my channel and welcome if you're new!

As you may know I LOVE my food, and I know how hard it is as a parent to always think about new recipes and what to make for your baby and your family. So I've decided to offer you 10 Healthy & Easy Baby Food Recipes in 5 different episodes!

In episode #3 I will be showing you 2 super easy dishes- A bit of Welsh and Italian for you.. I'll be sharing a leek and potato soup and beetroot risotto, both super tasty! My baby absolutely loves these.

Find the recipes below. These are based on a baby's portion, just increase these if you are cooking for all the family!

LEEK AND POTATO SOUP

INGREDIENTS
Extra Virgin Olive Oil
1 knob of butter
1/2 potatoes
1/2 leeks
Mixed Herbs
Parmesan Cheese
Cooking cream (Optional)
1 Low salt stock cube
Enough boiling water to cover the ingredients
Hand or normal Blender

METHOD
1. Heat some olive oil and butter in a pan
2. Add sliced leeks and saute until soft on a low heat(approx 6 minutes)
3. Add the potatoes, mixed herbs and stock to the pan and bring to the boil. Reduce heat, cover and cook for about 15-20 minutes; or until potatoes are soft.
4. (Optional) Using an immersion blender, puree the vegetables and stock until creamy and lump-free.
5. Stir through the cream (if using) and add some grated parmesan cheese

BEETROOT RISOTTO

INGREDIENTS
Extra Virgin Olive oil
1 Onion
1 Carrot & 1 Celery
1 Clove of Garlic
1/2 stock cube
2 Beetroots ( ready cooked ones are easier!)
Parmesan Cheese
Soft Cheese
Arborio Rice for Risotto
Mixed Herbs

METHOD
1. Heat the oil in a pan
2. Add the chopped onion, celery and carrot and saute until soft (3/4 mins)
3. Add a handful of risotto and stir
4. Add 1/2 a stock cube and boiling water to cover the rice
5. Stir and leave for 15-20 minutes
6. Keep checking the rice and add water as it dries up
7. When the rice is almost cooked, chop the beetroot and blend
8. Add the beetroot to the pan with the risotto and mix
9. Blend again if needed (Optional)
10. Add parmesan cheese & soft cheese and enjoy!!

I would add some salt and pepper for myself but try and avoid salt for baby.

That’s such a good little hack with the leeks! And Naomi is the same, she won’t let me put her down when I’m doing something either 😂
