Lavender simple syrup recipe

I'm cutting fresh lavender from our garden and making my own lavender simple syrup to use in my summer lemonade. Follow along as I make my Lavender simple syrup, including rubbing the lavender into the sugar to release more oils before creating the syrup.
After having lavender lemonade at a local restaurant, who made their own lavender simple syrup, there was no doubt in my mind I was going to go home that day and harvest my English lavender to make my own lavender simple syrup recipe and it was so easy!

would you have advice on how to convert a simple syrup into a jelly? we are harvesting fireweed with our school kids and want to make jelly. However, no stores have pectin in stock. Would we be able to convert a simple syrup into a jelly?

Are there different kinds of lavender? Does it matter? Does your lavender attack lots of bees? Mine does and it makes it nearly impossible to harvest. I enjoy all of your videos and I like the variety; cooking, thrifting, decor, life at home....
