Bison T-Bone Steak

We picked up a Bison T-bone steak from the farmers market a couple weeks ago and we finally got around to cooking it up.
We used royal oak lump charcoal and cooked it around 400-500 degrees in the Big Green Egg.
This was an amazing bison T-bone steak juicy and delicious.

Got that one spot salted really well! Wish I could get bison t bones and rib eye, all they sell here is ground.Good cook Jason Rock On!

Chef Julia Child was spot on with wild game... over season and under cook :)Brian, nice job.... I have never had a Bison before.Years ago, before I got into cooking, BBqing and smoking , I was giving some ground Elk...That was the best tasting brick of meat loaf that I ever had... dry as a hot day in Hell, but tasted good....

That Bison T Bone is huge, Brian! I very rarely see 'em that big, and I'm surrounded with Bison ranches out here. But, there's this one local company heh heh.

Good looking steak Brian!  Between you and Mr. Smokey Goodness you have me craving to try a bison steak.  I've had ground bison, but never a steak!  Great looking cook!  I think your lab wanted the was a sniffing pretty hard!

Not sure why the kid is in this video, but the steak looks decent. Yes, bison is a healthy red meat, so is goat.
