The never waste food and express love trough food is because Italy have faced poverty many times in history so it's ingraved in our culture to be respectful about food and not waste it because "there are people who don't have enough food" (to this day moms still scold their young children that don't want to eat saying "there are hungry kids in Africa so you can't waste it")
An example is that many recipes actually use leftovers as main ingredients like meatballs, macaroni pizza pie, filled peppers etc there are many delicious dishes that come from the idea of never waste food.

Actually to trow bread in the trash is actually seen as a sin, old people would kiss it and do the cross sign before doing it (IF they do it at all), most would simply crumble it and leave it for birds to take. I remember when i was a kid my mother would collect all the leftover bread of the week (if there was any) and take me to the park to give it to birds and ducks living there. I still treasure the memory.
