Ingredients :
For the Crust :
Graham crackers - 9 whole sheets
Sugar - 1 tbsp
Butter - 3 tbsp
For the cake:
Cream cheese - 16oz ( at room temperature )
Egg - 1
Sugar - 1/2 Cup
Vanilla Extract - 1/2 tsp
White Chocolate - 3 oz
For Raspberry sauce :
Sugar - 2 tbsps
Raspberry - 1/2 Cup
Method :
Preheat the oven to 325F and line a loaf pan with parchment paper. Just cover the two longest sides alone!. In a food processor combine the graham crackers, melted butter and sugar, Pulse until well combined and the mixture looks like wet sand. Press the crust into the bottom of the pan and bake it for 15 minutes. The edges of the crust will start to turn slightly golden brown. Remove the crust from the oven and let it cool. Turn down the oven temperature to 300 F.
In a food processor,, pulse the sugar and raspberries and make a sauce. Keep it refrigerator until use.
In a double boiler, melt the white chocolate and keep it aside.
In a bowl, beat cream cheese and sugar until light and fluffy. Beat in the egg and beat well until creamy. Add vanilla extract and beat well. Add the melted white chocolate and just combine well together. Pour the mixture on top the crust and level it well. Dot the raspberry sauce on the surface and swirl it.
Bake the cheesecake at 300 F for 45- 1 hour or until the surface is set and not sticky. It will have a golden yellow hue. Insert a fork and check for doneness. Fork should come out clean. Refrigerate overnight and sliced them next day! Yummy cheesecake is ready.
Tips :
1. Once cheesecake is bakes. Do not remove from the oven and keep it on counter top. Sudden change in temperature causes the surface to crack. Keep the pan near the oven itself with the oven door open.
2. Once baked, the surface is set and got the yellow hue. But when fork in inserted it's not runny but sticky. Keep it in the oven for more time and bake. Even after that, in case fork doesnt comes out clean- just refrigerate. It will be completely set overnight.
3. Adding white chocolate is optional. Raspberry sauce is optional too! They are just for flavours. My kids love it.!
4. Baking the crust first is very important.
