☐ Boneless/Skinless Pork Shoulder Butt (14 lbs) *20% fat or more

SPICES TO GRIND:
☐ 2 Tbsp Fennel seeds
☐ 1 Tbsp Coriander seeds
☐ 1 Tbsp Oregano
☐ 1 Tbsp Basil
☐ 1 Tbsp Paprika
☐ 2-3 Tbsp Kosher salt
☐ 1 Tbsp Pepper corns
☐ 1 Tsp Red chili flakes
☐ 2 Tbsp Sugar
☐ 1 Tsp Anise seeds

☐ 2 Tbsp grated garlic
☐ 1 Bush chopped Parsley
*For Spicy Sausage, add Cayenne to taste
☐ water until meat is tacky (approx. 1/2 cup)

☐ Hog casings (soaked in water 1 hr or more)
