Another easy way is to use heavy weapons. Just parry once then heavy attack and it hits them 80% of the time. The other 20% they roll back and you just can repeat again.

you basically parry 3 times then it will break the bandit posture and then hit it like 3 times if possible then repeat the process

Somehow I manage to kill trios of bandits by circling them at medium distance and spamming M1, even though they block half the time
