I like how the theme goes along with how Toriel is feeling, the initial tune at the start is a strong melody that encourages a fighting sense or a rebellious attitude. There is a tune that turns into a joyful, happy theme but is cut away by the quiet, fighting theme, this could symbolise the feeling of Toriel wanting to fight but still feeling hesitant about it.

what surprised me even more is when I did that, the God damn flower commented something like : "I KNOW WHAT YOU DID" /smiles wickedly. " you killed her. then you went back and spared her because you regretted it." /smiles even more

I remember playing through this the first time, then using standard RPG logic, thinking that defeating her would automatically trigger a scene where she would stop fighting me, then killing her, then performing the fastest reset in gaming history. Good times.
