I think all of them are capable of expressing the other emotions, or in other terms, feeling ambivalence. Emotions are nuanced, so it makes sense that they can occasionally get mixed around. I mean, Anger gets excited sometimes (He smiles at the end of this scene), and Fear can feel relief when things turn out okay. I’d see no reason why Joy wouldn’t be able to feel Anger. Even in the first movie, she mourned over Bing-Bong’s death, so it’s not outside the realm of possibility for her to feel other things than “No thoughts, head empty” happiness. (I’d also like to mention, anger isn’t a direct opposite to joy. You can enjoy revenge, an action taken out of spite. Venting your frustrations is also very cathartic, and does often lead to relief. I wouldn’t consider them opposites, I’d just see them as different extremes.)

i feel like people feel emotions in different ways. when riley is sad, she tends to see the light in things. however, someone else could feel angry when they are also sad. kind of like how our experiences influence our emotions, the same happens with riley’s emotions.

Sadness didn't evolve into a new emotion... she was just finally understood for what she is. Joy isn't a literal embodiment of Joy, she is a being created to create as much joy as possible in Riley's life. This is one of those things that really just shouldn't be thought about too much.

My guess is it's all her emotions balancing out.

As she gets older the emotions start to become more sophisticated

I almost feel like joy is experiencing a form of pride in this moment. She sees herself as better than the other emotions and is confused why they can't be as great as her.
Pride is often associated with joy!

My theory is that the emotions don’t have to reflect the emotion they control. For example, all the emotions showed sadness in the first movie when Joy and Sadness went missing, so maybe they just control the emotions and don’t become them

In my mind, each of the emotions has all their own range of emotions like any person does, but whatever they are is the primary emotion they feel. That's why sadness can be happy, anger can be afraid, joy can be angry, so on and so forth.
