Samosa's are loved in every household as a snack, or an accompaniment to a main dish or a meal.
The samosa is claimed to have originated in the Middle East (where it is known as sambosa), and is commonly found within numerous locations across the world, from Africa to india, the Samosa is loved by all.
This is my aloo samosa recipe, which has a mix of potatoes, onions and spices wrapped up in a hand made pastry, deep fried until perfect. Best served with a green mint chutney this will wow everyone that takes a bite.

INGREDIENTS:
Samosa Filling:
600g potatoes
1 medium onion finely diced
Good handful fresh coriander
2 tablespoons oil
juice of half a lemon
1/2 tablespoon salt
1 teaspoon:
chilli powder
coriander powder
garam masala
nigella seeds (kolonji)
dried chilli flakes
1 tablespoon cumin seeds
3 green chillies (optional)
2 teaspoons of:
ginger & garlic
Samosa Dough (makes approx 22)
2 Cups of Plain Flour-500g
150ml/200ml water to bind the dough
4Tablespoons of oil
1 teaspoon salt
1/2 teaspoon carom seeds (ajwein)
Left over filling can be frozen in zip-lock bags for up to 1 month in the freezer! 😊👍
