It's the most wonderful time of the year: mango season! If you've never had Mango Sticky Rice before, then you are missing out. It's, hands down, one of the most delicious things in the world. There's a reason why it's the most popular dessert in Thailand.

Rich coconut sticky rice meets fragrant ripe mango plus a salted coconut sauce to tie it all together.

My version takes just one hour to make, compared to the traditional method which can take up to two days. It's the perfect summer party dessert. Oh, it also just happens to be completely vegan and free of most allergens. That means everyone can enjoy it.

Mango Sticky Rice
(Makes ~6 servings)

Coconut Sticky Rice
- 1-1/2 cups (310g) glutinous rice (also called sticky rice or sweet rice)
- 1 can (400 mL / 14 fl. oz) full-fat coconut milk, reserve 1/2 cup (120mL) for coconut sauce
- 3/4 tsp (4.5g) fine sea salt / table salt (1-1/2 tsp Diamond Crystal kosher salt)
- 150g (3/4 cup) sugar
- 1/2 fresh pandan leaf (optional)

Salted Coconut Sauce
- 1-1/2 tsp (4.5g) cornstarch
- 1/4 tsp (1.5g) fine sea salt / table salt (1/2 tsp Diamond Crystal kosher salt)
- 1 tbsp (13g) sugar

To Serve
- 3-4 ripe mangoes OR mango ice cream
- Toasted sesame seeds (optional)

Coconut Sticky Rice
1. Wash rice thoroughly. Drain off excess water. Soak rice in boiling hot water. Cover the bowl with a plate and soak for 15 minutes.
-- Make Coconut Infusion --
2. Drain off most of the hot water, leaving just enough to be exactly level with the top of the rice.
3. Cover the bowl. Microwave on high power for 7 minutes. Remove from microwave (careful, will be very hot). Fluff up rice with a fork. Give it a taste. If it’s tender, then it’s ready. If it still has a hard chalky centre, microwave for another 2-3 minutes (covered), until tender and cooked.
4. While the rice is still hot, pour over the coconut infusion (see below). Gently stir together. Cover the bowl again and let rest for 30 minutes or until all the liquid has been absorbed into the rice. Halfway through the resting time, give it a another stir to redistribute any liquid.
-- Make Salted Coconut Sauce, Peel Mangoes --

Coconut Infusion
1. Pour out 1/2 cup (120 mL) coconut milk from the can and reserve for later.
2. Add remaining (280 mL) coconut milk to a small pot. Add sugar, salt, and if using, pandan leaf.
3. Heat on medium until gently simmering and all the sugar is dissolved. Turn off the heat and keep warm until ready to use. If the mixture cools down before the rice is ready, re-heat over a low flame while rice is cooking in the microwave.

Salted Coconut Sauce
1. With the reserved 1/2 cup of coconut milk, add a small splash (1 tsp) to the cornstarch. Stir together until lump free. Add cornstarch mixture back to coconut milk, along with salt and sugar.
2. Pour mixture into the same pot as before. Cook over low heat, stirring constantly, until the sauce thickens enough to coat a spoon or spatula. Pour into a serving container and set aside until ready to serve.

Assemble
1. Peel mangoes and slice off mango cheeks. Cut mango into slices.
2. Add sticky rice to serving plate. Arrange mango slices neatly. Spoon over coconut sauce. Finish sprinkle of sesame seeds (optional). Enjoy!

Here’s some additional info that didn’t make it into the video:

- If you don’t have a microwave, the sticky rice process can still be shortened with a hot water soak. Soak washed rice in boiling water for 15 minutes. Transfer to steamer and steam for 25-30 minutes. Proceed with the rest of the recipe.

- No, this recipe won't work with regular white rice. It'll turn out like a soupy rice pudding texture. Glutinous rice / sticky rice can be found in all Asian grocery stores. It should be quite affordable, less than $5 for 2 kilos / 4 lbs. A 2 kilo bag can make this recipe 6 times, serving 36 people.

- In Thailand, Mango Sticky Rice would be served with crispy toasted mung beans. It can be hard to find outside of Thailand, so toasted sesame seeds make for a good pretty good substitute.

- Coconut sticky rice can be stored in the fridge for up to 3 days. To re-heat, place in microwave safe bowl, sprinkle on some water, cover and microwave for 30 seconds.

- The salted coconut sauce can also be stored in the fridge. It can be served cold.

- Why is sticky rice so sticky?
Starches are made of two types of molecules: one small and linear, the other large and branched.
The linear molecule, called amylose, lines up neatly and forms extensive bonds with each other. This means more energy, read: higher heat, is required to break apart these bonds and form a gel.
The large branched molecule, amylopectin, has a messy structure which isn’t as able to form cohesive bonds. It gels more readily at a lower heat. And, due to its larger molecular size, creates a thicker gel.
The ratio of amylose to amylopectin varies depending on the grain. White rice is made up of 20% linear amylose and 80% branched amylopectin. Glutinous rice, on the other hand, consists of almost 100% amylopectin.
This is what makes glutinous rice so wonderfully sticky.

I made this recently and it was SO good. My boyfriend who made it the traditional way - letting the rice sit overnight and using a steam basket, etc. said it tasted just like the Thai restaurants we go to. This is going to be a favorite dish to make for family and friends. Thank you!!!

I still have memories of tasting this dish in Thailand when i was 15, it's 14 years ago now but it's something that will forever stick with me. Thanks for yet another simple and including recipe. I'm a tad lazy so the microwave seems perfect for this, i was a tad sceptical but i trust your taste comparison. You haven't told us anything but the truth up until now :)

Mango sticky rice is one of my favorite desserts. The recipe I used made a large batch since I would make it for my coworkers as a lunchtime treat (actually cooked the rice in my office in my rice cooker so it would be fresh & warm). They told me that my version was better than any restaurant's.

I know what you mean about trying mango sticky rice for the first time. For me, it was my first year of college, when my RA took a group of us to the local Thai Buddhist temple for Sunday brunch. Thank you so much for this recipe, I was worried the sticky rice wouldn’t cook properly and the whole thing would fail, but I soaked the rice for 4 hours and soaked it in boiling water for 10 minutes then steamed it in a steamer (I wanted to aim for more traditional) and let me just say I took a bite of the sticky rice and caught a glimpse of heaven.
