EDIT: I now understand it after analyzing in excel. No matter what after restacking the cards, the selected card will always start off third from bottom after spelling the first word. "OF" moves it to 5th from bottom, and any suit will keep it at 5th from bottom after that. Thus a 5 letter word will reveal it at the end.

Did this 4x and had different cards for each one: 4 of spades, 6 of hearts, queen of clubs, and 2 of diamonds. In the end, I was bewildered that it worked each time.

I nice touch on this trick is if the person you are doing it to has a 5 letter first name/second name, use their name at the end. It makes it personal and adds that extra wow factor. You can scope out your audience before you do the trick

It's the movement of the selected card in the deck.
It starts out in 3rd position. After the first count it moves to 7th position as none of face values of the cards contains less than 3 letters. The word 'of' is a constant with 2 letters moving the card to 5th position. This is key as none of the suits spelled out contains less than 5 letters. This will leave the card in 5th position and you can then use any 5 letter word to reveal the card. You can spice up the trick a bit by asking them to pull a 10th card out of the unused deck and spelling it out and the trick still works.

I learned a version of this years ago called the 21 Card Trick. I know how to do it, but I still don't get it (which technically means I can perform this trick on myself).

Deal 21 cards face up, 3 columns of 7. Deal the first row, them the 2nd row, etc. Have the victim pick a card then point to the pile it's in. Put that pile in the middle of the other two piles. Repeat this process two more times.

By the 3rd deal, the card should be the 4th card in the 2nd column, or the 11th card in the whole packet. You can then pick whatever card revealing method you like to show them their card. The way I learned it was spelling out Abracadabra, which has 11 letters. You can also do a casino wash and somehow keep track of the target card, which would look very impressive if done by the right person
