INGREDIENTS
MEAT: 1 lb ground pork, 5 oz pork fat
CHILES: 4 ancho, 2-3 pasilla
SPICES: 3 garlic cloves, ½ tsp ground cumin, ¼ tsp ground coriander seeds, ⅓ tsp ground black pepper, ⅓ tsp ground cinnamon, ⅛ tsp ground cloves, ¾ tsp ground oregano, ⅛ tsp ground ginger, 2 tbsp paprika, 1 tsp salt, ⅓ cup apple cider vinegar

I have to admit, you are my favorite cooking site for Mexican food. A friend gave me a chorizo recipe many years ago and I prepared both her recipe and yours to compare them. You're won hands down! I don't know why I've never seen these videos...I've been a subscriber for quite awhile and I have my little bell on. Your recipe it's by far the best here I have tried many but the ginger gives a kick and you don't get the heartburn like the one you get with the commercial Chirizo.

I am from India living in US. I don't understand Spanish but I love Mexican food. The stone bowl which you used for grinding, we used in our society too.. I wasn't knowing its used anywhere else
in the world!!

I made the chiles last week for another recipe.  After seeding, de-veining and toasting the chiles, I tore them up and ground them in a spare coffee bean grinder that I use just for fine powder in seconds.  Clean up is easy too; just put 1 or 2 T. dry rice in the grinder and grind it then dump it.  Leaves the grinder nice and clean.  :)

I absolutely love this video. I used to use pre ground chile and spices and it came out well, but this recipe is amazing! Nothing beats hand made. I don't always have time, so when I can I make large amounts and freeze it. Thanks for the video.

I tried this recipe and I love it. Very yummy. I forgot the cinnamon and ginger but it is still so yummy 😋. Oh and instead of lard I used oil. Mmm so good. I will never buy the yucky stuff from the store again.

Absolutely beautiful. My husband does not like pork but I think I might make a version of this with ground beef. I know it wont be totally authentic, but we'll still get all of those wonderful flavours!! Muchas gracias!
