Funtastic meringue roulade with lemon curd and berries! Melts in your mouth! [Subtitles]

Meringue roll is an tender dessert according to a very simple recipe. This dessert has crispy meringue top and marshmallow like center, and also so tender cream with fresh berries... Definitely, this is a bright and memorable dessert!

The unusual color of the meringue is achieved by adding brown sugar. It's a richer caramel flavor! But you can, of course, use all white sugar, the dessert will still be incredibly tasty!

Ingredients:
Curd:
115 g of juice or puree (lemon/passion fruit/currant/lime)
65 g sugar
60 g butter
4 yolks
Meringue:
150 g egg whites (~ 4 eggs)
120 g brown sugar
120 g white sugar
(OR! you can use instead 240 g of white sugar or 240 g of brown)
1 tbsp lemon juice
15 g corn starch
almond or pistachio flakes (optional)
Baking sheet 30*40 cm
Preheated oven to 150 °C (302 °F), top-bottom mode.
Cream:
250 g cold mascarpone
165 g cold heavy cream 33-35%
25 g powdered sugar
any berries (optional), strawberries and blueberries in video
For decoration you can use part of the whipped topping, chopped nuts and fresh berries, mint leaves.
