Growing Sunchoke from Tubers, Days 14-18

On day 14 of this series I bought the 2 best tubers in stock at my local grocery store; they finally restocked, although many tubers were moldy and gross. I put both of them in makeshift Coke bottle setups with plastic wrap on top and daily sprayings with 1+% hydrogen peroxide. The new tubers look to be doing great thus far with around-the-clock 100% humidity, but the one with the showiest results isn't necessarily the one I have my eyes on. After just 4 days of incubation at a warm indoor temperature I seem to have sunchoke tuber sprouting figured out!
Thus far, all soil-based approaches have failed me. What I love about tuber sprouting in transparent vessels is that I can see if there's progress (and toss the tubers if they turn to mush) instead of waiting weeks and then digging into the soil only to find a rotten mess.
