Head tilting is a natural part of body language. People often do this when they're heavily engaged in a conversation and are genuinely listening. The brain subconsciously picks up the sound delay between each ear to pinpoint the source of the sound, which is actively being intent with the other person and what they have to say, ultimately showing that what the other has to say is of interest to the listener.
