The unknown could serve as a personification of doubt, like how you dont know what will happen when try to achieve your dreams or something . As a bonus twist, it could be revealed that Wonka never notices the unknown, or at least has no fear when he dose. It could be seen as a sign of his optimism or perhaps his recklessness. Meanwhile, the unknown is just doing his job. He wants to scare you, but only so you won't charge recklessly in to him.
