For 8 full portions we'll need :
2 packs of white mushrooms
2 chicken
150 grams of Kefalograviera cheese
150 grams or Kefalotiri cheese
1 pack of milk cream
a bit of olive oil and some peper.
For this recipe you'll need to boil the chicken beforehand until the meat is soft enough to eat. Remember to keep the boiled water, the juice, because you'll need it later.
Throw the olive oil, (about 2 tablespoons) and the mushrooms into the pot and let them fry for a while, until they start to get that beautiful brownish colour. That will dry them out. Then throw in the chicken meat (which you have separated from the bones earlier) and mix them to start heating up together. Add one spoon of chicken juice in the mix, and stir around for a while so that the liquid will start drying out. Don't let it dry out entirely though. We need some liquid present.
Then it's time to throw in the cheeses, Kefalograviera and kefalotiri cheese, which we 've ground earlier. Stir and mix it around to get evenly spread and mixed, and then add the milk cream.
Keep mixing until everything is spread uniformly, in the high heat setting, and then take the pot out of the heat. Add some peper for seasoning and then, pour the contents into a glass pan, add some spoons of "chicken juice" and put it in the oven, also in the high setting, and let it get cooked.
When adding the seasoning, don't add much salt because the cheese is already salty.
After half an hour the meal is ready to eat. Enjoy!
