the yolk is influenced by the feed of the hen. The color doesn’t mean it’s healthier, the feed is just more pigmented. Some farmers add super pigmented stuff like marigold flowers to make the egg yolk brighter. Instead, go off the egg’s grade and whether it’s pasteurized and organic (if it’s within your budget) :) I took a bunch of food science and chemistry classes at SDSU for my nutrition major.
