I wonder if ancient people were just seeing goats or other horned creatures that simply had a genetic abnormality, and that these single horned animals were so rare they were seen as holy or magical?

It's an ungulate with a single horn. I don't see why people think that's impossible. There are at least 3 at Candy Mountain and are said to sleep in a cave at its base.

According to the 1828 Noah Webster Dictionary and the 2003 book by Eric Dinerstein - the Unicorn is the One Horned Rhinoceros. It is also NOT in Greek Mythology according to Google.
