Shadowfax from lord of the rings was not a unicorn. He was one of the mayoress which are great horses who are large, fast, intelligent and strong. They are said to be so fast their hoofs catch fire when they run. They are also said to be untamable and despite their great size they are said to be difficult to find. (They don’t have horns, and are drawn to virtuous heroes rather than virginal maidens)

Unicorns are dainty, thin, and beautiful horses their hair is said to be so pure white they look like sunlight. You were correct about the legends of unicorns being drawn to virgin maidens and that very much being their fatal flaw.
