How to Make Corn Meal Lemon Bars

Corn Meal Lemon Bars

2 sticks butter, softened
1 cup sugar
1 1/2 cups all-purpose flour
3/4 cup fine yellow corn meal
1 teaspoon salt
1 lemon, zested
1/2 cup slivered almond, chopped
1 jar lemon curd
1 cup sweetened flaked coconut
1.Preheat oven to 375F. Grease a 9x13 baking dish.
2.Beat together butter and sugar. Add flour, cornmeal, salt and
lemon zest and beat until the dough just holds together. Fold in 1/
4 cup chopped almonds. Press mixture into prepared dish and bake
for 10-15 minutes, until the dough sets and the edges are golden.
3.Remove from the oven and evenly spread lemon curd. Sprinkle
the top with remaining 1/4 cup of slivered almonds and coconut.
Bake 20 minutes or until the top is golden brown. Remove from
oven, allow to cool and then cut into bars.

I would use a combination of oat/almond/coconut and add 2 tsp of flax meal.

Pretty much anything. It's just to add some texture. Are you allergic to other nuts? Try adding unsalted roasted pumpkin seeds. If you have no problem with other nuts, try walnuts, macadamias, or peanuts.
