Had horse once in Mongolia in a stir fry, and honestly it was pretty good. It's a little tougher and gamier than beef, but the marinade really broke up that toughness and it came out nice

In China, we have something called lǘròu huǒshāo 驴肉火烧 (sometimes called a “donkey burger”???), which is shredded (or minced) donkey meat stuffed into a crispy shāobǐng 烧饼 (otherwise known as a huǒshāo 火烧, which simply means “fire burned”), oftentimes with cilantro and green chili peppers. It’s primarily a Hebei thing. I had it at the beginning of the year when I was in Shanghai, and it was surprisingly good!

In South Italy we eat horse meat quite often. It's generally more lean than beef or pork and has a stronger taste. I quite like it, and it's even better when slow cooked with tomato sauce to make a delicious sugo.

I’m Italian and I quite like horse. Be aware there is a lot of variation in the quality of horse meat. If it was bred, raised, and fed for meat it is delicious. If it is a retired racehorse or working horse, gross. The meat is sweet and has a clean but strong flavor. It is very good served as tartare or carpaccio. It can also be air cured, or braised and shredded for ragù. Quality horse steak is great too. I like beef steak cooked at medium rare or medium but I think horse should be cooked rare. In the region I am from there are a number of horse farmers who raise foals for the meat market. Italy has its own breed of horse, the CAITPR that is bred mainly for meat nowadays. In the past it was created as a draft breed. In modern times the breed lays more body fat and has more muscles in its loins and middle reflecting its purpose as a meat animal.

From my experience horse is much leaner and has far more iron than beef, so it’s got a more metallic taste. It’s also darker than beef but not as dark as game meat.

Horse has a subtle sweet flavor and an irony/gamey aftertaste. I like it, but horse meat, atleast here in (northern) Italy, costs a fuck load of money. In the South, horse meat (and donkey meat) is way more common and thus cheaper (and tastier the southerners say)

I've had horse sashimi in Osaka. It had the softness of wagyu but without the marbling, a very lean soft meat

Yes, I reluctantly ate here when I visited Llubljiana on a public holiday and few restaurants were open. It tasted like the meat in canned ravioli

We do have "paardenworst" in the Netherlands. Which is a sausage, for on a sandwich. Also, we have "paardenrookvlees" which is smoked horse meat. It's pretty good.
