2 interesting takeaways are chamfering the tenon hole and backing up procedures to avoid blowout. I particularly enjoyed your punching through the full joint backing up the peg with a matched hole on the exit side scrap. As they say in your neck of the woods….simply Brilliant!

Thanks for the video.
At 7:43 you chamfer the hole in the tenon on the shoulder side. But this side of the hole is not in the way to the peg.
The peg presses against the other side of the tenon’s hole.
Perhaps my poor english make me be mistaken.

Why you don't make the hole of the mortise before the mortise ?
Why the hole is not at 1, 5 x diam' of dowel ?
