COOKING INSTRUCTIONS:
#1 Southern Johnny Cakes
1. In a bowl, mix together the dry ingredients with a wooden spoon. Add the buttermilk slowly. Mix in the egg, cutting into the yolk with the spoon's edge to help it mix in better. Add the water and fat or oil and stir well. The texture should be like thick soup, so you may need to add more water.
2. I like to fry the cornbread cakes in my grandmother's cast-iron skillet or on a flat iron griddle, but any skillet or grillded will be fine. Heat the skillet or griddle over medium heat and grease it well with the fat of your choice. Once the skillet is hot and the fat is sizzling, drop the batter from a 1/8 cup (2-tablespoon) measure into the skillet, in batches if necessary. Fry the cakes until the edges are bubbling and the centers are set, then flip with a spatula to fry them on the other side until they're done. Like with pancakes, you can't say how long it will take, but the second side always cooks faster than the first. If the cakes seem greasy, drain them on paper towels before serving hot.


#3 Chicken Pot Pie
1. In a large pot, add butter, potatoes carrots, onion, celery and garlic. Sauté until tender. Stir in flour until blended.
2. Gradually add broth.Bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in peas, 1/2 cup cream, parsley, garlic salt and pepper. Stir in chicken.
3. Spoon into two ungreased 9 in pie plates. In a small bowl, whisk egg and 1 Tbsp or cream, set aside.
4. Roll out the pastry to fit the top of each pie. Place over filling and trim, seal and flute edges. Cut slits in pasty to vent. Brush top of pies with egg mixture. Bake at 375 for 30-35 minutes or until golden. Let stand for 10 mins before cutting.

#4 Hot Milk Cake
1. Adjust an oven rack to the middle position and preheat oven to 325 degrees. Grease and flour a 12-cup tube pan or Bundt cake pan. In a medium bowl, sift together flour, baking powder, and salt.
2. In a small saucepan over low heat, melt the butter. Stir in milk and vanilla and continue to heat until small bubbles form around the outside of the pan and the mixture is very hot but not boiling. Reduce heat to low.
3. Meanwhile, in an electric mixer fitted with the whisk attachment, combine eggs and sugar on medium-high speed for 5 minutes.
4. Once the egg and sugar mixture has tripled in volume, slowly add the hot milk mixture, mixing on low speed until incorporated. Add the dry ingredients in two batches, mixing after each addition until just incorporated.
5. Pour the batter into the prepared pan and bake for 1 hour, checking at 55 minutes. A toothpick inserted into the middle of the cake should come out clean, with a few crumbs attached, but do not over-bake.
6. Cool in the pan for 10 minutes before inverting onto a cooling rack or serving plate to cool completely. Dust with powdered sugar if desired.

#5 Cheesy Beef Goulash:
1. Saute ground beef in skillet over medium-high heat until cooked. Drain. Add garlic and saute for about 5 minutes. Add water, tomato sauce, diced tomatoes, Italian seasoning, bay leaves, soy sauce, and seasoned salt. Stir well. Cover and allow to cook for 15-20 minutes.
2. Add the uncooked elbow macaroni to skillet, stir well, return the lid and simmer for about 30 minutes. Turn off heat, remove the bay leaves, and add 1 cup of cheddar cheese right before serving.

#6 Ham and Bean Soup:
1. Rinse beans (remove any that are discolored). Fill a large pot half full with water and bring the water to a boil. Remove water from heat and add the beans. Place the lid on the pot and allow the beans to soak 2 hours, then drain the water.
2. Heat 2 tablespoons olive oil & 2 tablespoons butter in Dutch oven or soup pot.
3. Add carrots, onions and celery and sauté until tender.
4. Add garlic and cook 30 seconds more.
5. Add all soup ingredients except the beans to the vegetables and bring to a boil, then reduce temperature to LOW and simmer 1 hour. Stir periodically.
6. Add the beans to the soup. Bring to a boil, then reduce temperature to LOW and simmer 2 hours or until the meat begins to fall away from the bones. Stir periodically.
7. Remove the meat from the bones then place the meat back in the bean pot. Discard the bones.
8. When ready to serve, remove bacon strips and bay leaves.
9. If desired, add a dash or two of hot sauce.
10. Serve with corn bread and garnish with fresh cilantro or parsley.


#8 One Hour Homemade Bread:
1. Mix dry ingredients. Add oil and water. Mix for 1 minute and then check the consistency of the dough. The dough should be very sticky. If it is too dry, add more water.
2. Mix for 5 minutes. (Do not add any more flour after the dough has finished mixing.)
3. Spray kneading surface with cooking spray and turn dough out onto surface. Knead dough briefly until it has a smooth even consistency (this will only take several turns of the dough to accomplish).
4. Divide dough into 2 pieces (or more if you wish to have smaller loaves) and shape loaves into desired shapes and place on greased baking sheets. Cover with a large dish towel and let rise for 25 minutes.
5. While loaves are rising, preheat oven to 350 degrees Fahrenheit. When loaves are ready to go into the oven, use a sharp knife (you can lightly spray your knife with cooking spray to prevent dragging) to make several slashes in the top. Make each cut about 1/4-inch deep at a 30 degree angle. Bake loaves for 25 minutes, or until they are golden brown.

#9 Poor Man’s Pudding:
In a bowl sift flour and baking powder together… in another bowl, cream butter and sugar and add vanilla… then slowly add the milk and flour in alternating 1/4 cup increments until all together and smooth… spread in a buttered baking dish…
for the sauce… in a sauce pan, mix all the sauce ingredients together and bring to a boil… boil for a few seconds and then pour over the cake batter (do not mix)
bake in a 325 preheated oven for 45 min

#10 Twice Baked Potato Casserole:
Bake Potatoes:
Preheat oven to 400°F.
Rub potatoes with olive oil and salt and place on baking sheet.
Bake for 45 to 60 minutes or until tender when pierced with a fork, flipping halfway through. Let cool for 15 minutes.
Assemble Casserole
Reduce oven temperature to 350°F. Lightly grease an 9-inch square or 9 x 13 inch baking dish and set aside.
Cut potatoes into bite-sized pieces and place in a bowl. Its perfectly acceptable for the potato pieces to slightly fall apart.
Stir in mayonnaise and sour cream.
Stir the cheese, bacon and green onions into the potato mixture.
Transfer the mixture into the prepared baking dish baking dish. Top with shredded cheese and bacon for the topping.
Cover dish with foil and bake for 30 minutes, removing foil for the last 10 minutes.
Top with sliced green onions and serve.
