USDA should really put a "changes from the previous editions" in the book.
Also the term "super boobs" for chicken breasts made me laugh out loud.

I started weighing my chicken on a food scale and found 14.5 - 15 oz max for raw pack was just to the shoulder of the jar. No more failed seals. Thanks Leisa

My 2015 edition reads 1 1/4" headspace for raw pack chicken or if adding liquid. I wrote a few months ago in my Ball book 1 1/4" headspace per 2019. It is NOT easy to get that headspace raw packing chicken even with big effort of the Pokey Joe! Our breasts are SO full of water nowadays but I get plenty released just slicing it to can it so have not been worried about the new 1/4" more space. I had the convo with a few canning friends sending them pics of the 1 1/4" from the 2015 edition and honestly they were convinced I was trying to kill them LOL. NOW that you have shared this I can now SAY out loud canning chicken or making a video to use 1 1/4" inch headspace and refer them to your video.

I WOULD IMAGINE IF IT'S A HOME RAISED CHICKEN AND NOT STORE BOUGHT 1 INCH WOULD STILL BE SUFFICIENT

Thanks so much! This is one of those, "I didn't know what I didn't know" moments! However, I think when I can some of my home-grown chickens that aren't the big boobed meat birds, I should stick to the 1" headspace. Normally, I freeze the chicken, but my freezers are packed full at the moment. Which is a good thing! I just discovered you, and am enjoying your videos, especially the pantry tour. What is it about other people's pantry shelves that is fascinating? Seriously, I now have bungee cords with lids on them! Genius! Thanks from central NY state!
