I tend to cook in weekly themes when cooking for family and friends. Thank God this week is Island themed! It looks absolutely too good not to try and I can safely say DINNER!!! Thank you Mr. Zimmern!

good tip for this kind of dish is to wash off the surface starch from the rice. will result in a more stew like rice. works well with risotto also

He's so right about the wine. "Cooking wine" is hot garbage. Never use it or a cheap regular wine in your dish. Another tip along this avenue is to never add water if you can help it. Always add broth, stock or wine if you have it instead.
