In the Caribbean, Puerto Rico for example as well as the Dominican republic it’s the very green plantains that are used for tostones not the semi ripe ones. Sure they can be used as well but the end result is a slightly sweet tostone, not bad but not great. The very green ones are the way to go especially if you’re lucky enough to pick them off the tree yourself because they are so much easier to peel.
