I started by learning axe throwing, and my venue can't allow knife throwing for safety reasons (the fences' mesh is too loose, so knives could slip through on a bad throw and endanger neighbouring lanes' throwers), although on very quiet days, when one can have a lane with no throwers on adjacent lanes, they just us throw whatever. On days like these I learned knife throwing, and with the knowledge I had from axes, it was basically the same, but more precise. So I'd say, both are equally hard/easy to learn, but knives require more practice to be as reliable.
But I feel like axes allow for more cool looking trickshots.

Axe throwing is easier from a set distances where knife throwing from multiple different distances is a lot more difficult

Axes are far easier to learn since there are more points of contact usually. Knives are a lot cooler though

I think knife throwing is the harder variation. Axe throwing might be a little safer and is usually easier to set up safety measures.

Axe was easier for me because I started with ballpeen hammers and screwdrivers. Plus I feel like axe impact with disrupt an opponent more than a knife

Axe, because most people don't start out with the right knife (too light). its hard to find an axe that's too light to stick.

It depends on what you got, but if you learn knife throwing other stuff like cutlery, needles and nails would be easy to throw
